Butternut Squash & Apple Salad with Local Ginger Dressing
Using local fall butternut squash and NC apples, this salad is easy to make and goes well with grilled sandwiches on warm fall days. The hint of maple syrup and fresh harvested ginger are enhanced by the bright flavor of the Murray River Salt and few turns of the pepper mill.
